Recipe: Gooey Hazelnut Chocolate Brownies


Like most living, breathing people, I'm a sucker for a gooey chocolate brownie. In fact, I choose to believe that people who don't like chocolate don't exist. I don't want to live in a world where people make the conscious decision to deny themselves the taste of chocolate goodness ;) .

This brownie recipe is delish. It's everything a chocolate brownie should be- gooey and rich with a melt in your mouth texture. The best part is it's made with items most people already have in their pantry. It's hard to believe this recipe is made using only cocoa- no baking chocolate required! No excuses not to make this one. 
Gooey Hazelnut Chocolate Brownies (adapted from The Smitten Kitchen)
Makes about 12-14 slices


Ingredients:
140 grams butter
1 1/4 cups sugar
3/4 cup cocoa
1/4 teaspoon salt
1/4 teaspoon cinnamon (optional)
1/2 teaspoon vanilla essence
2 large eggs
1/2 cup plain flour
2/3 cup chopped hazelnuts (you could also use walnuts or pecans, I'm just a big fan of Nutella and thought the chocolate/hazelnut mix would be yum... and it is!)
Some icing sugar for dusting

Method:
Preheat oven to 160˚c and position the oven rack in the lower third of the oven. Grease and line an 8x8 inch baking tray with baking paper.

Combine butter, sugar, cocoa, salt and cinnamon in a medium sized heat proof bowl and place over a pot of simmering water. Stir occasionally until all the ingredients are melted together. Remove from heat when the mixture is hot enough to make you want to remove you finger fairly soon after dipping it in.

At this stage it still looks quite gritty but don't worry, it will smooth out soon! When the mixture has cooled for 5 mins or so, stir in the vanilla then add the eggs one at a time, stirring in between. Sift in flour and fold until the it is just mixed then stir vigorously for about 30 seconds. The batter should now be thick and shiny. Finally stir in the nuts and spread evenly into the lined pan. Bake in the oven for 20-25 minutes. 

Remove the brownie from the oven and let stand until it is cool. Dust with icing sugar and cut into slices.
